White Winter Soup

Winter is coming and what’s better than a delicious soup to warm you up in the cold days? That’s right, nothing. This next soup recipe is made of typical winter veggies and it’s called white because we don’t use any green vegetables and its color is white. This white winter soup is very tasty and quite easy to make.

White Winter Soup

Ingredients:

  • 1 Medium Onion (Chopped)
  • 1 Medium Parsnip (Chopped)
  • 1 Medium Leek (White part, Sliced)
  • 1 Medium Potato (Chopped)
  • Half Medium Celeriac (Chopped)
  • Half Head of Cauliflower (Chopped)
  • 1 Stick Butter
  • 500-750 ml of Stock (Vegetable or Chicken)
  • 1 Cup Cream
  • Salt & Pepper

Instructions:

Get a soup pot and throw in the butter. When the butter melts, add the onions, salt and
pepper and mix it until the onion is translucent. Add the parsnip, leek, potato, celeriac and the cauliflower in the pot and cook them with the onion for about 10 minutes. Make sure to mix them so they do not become brown/burnt.

After 10 minutes, add the stock of your choosing and let the ingredients simmer until the
veggies are softened. Use a kitchen blender to mix the soup and afterwards use a sieve to
sieve the pureed soup, as it really makes a difference in taste.
