Avocado Lime Chicken Soup

Avocado Lime Chicken Soup

Ingredients:

  • 3 Medium Avocados (Peeled, Diced)
  • 1 Cup Chopped Green Onions
  • 3 Roma Tomatoes (Diced)
  • 4 Radishes (Sliced Finely in Disks)
  • 2 Jalapenos (Seeded, Minced)
  • 2-3 Chicken Breasts (Skinless, Boneless)
  • 4 Cans of Chicken Broth (14.5 Ounce Cans)
  • 1/3 Cup of Chopped Cilantro
  • 1 Tbsp Olive Oil
  • 2 Garlic Cloves (Minced)
  • 3 Tbsp Lime Juice
  • 1 &  ½ Cups of Water
  • ½ Tsp Cumin
  • 1/3 Tsp Oregano
  • ¼ Tsp Ground Coriander
  • Salt & Pepper

Instructions:

Take a large soup pot, heat the olive oil on medium high heat and add the chopped green
onions and jalapeno and cook for 2 minutes, until they’re tender. Add the garlic and saute for 30 more seconds. Add the chicken broth, the water and then the chicken breasts, Roma tomatoes, cumin, oregano, coriander and salt and pepper. Let them boil, then reduce the heat to medium and let it simmer for 10-15 minutes, until the chicken breasts are completely cooked.

Remove the chicken breast from the pot, reduce the heat to medium-low and add the
radishes. Wait a few minutes until the chicken is cool enough and shred it using two forks. Then add it back into the pot, along with the lime juice and chopped cilantro.

Just before serving, add the diced avocados in the pot, or you can also add them into the
