Paleo Asparagus Soup

Paleo Asparagus Soup

Ingredients:

  • 2 Lbs Asparagus (Chopped)
  • 2 Russet or Sweet Potatoes (Peeled, Chopped)
  • 1 Leek (Chopped)
  • 4 Cups Vegetable Stock
  • 2 Garlic Cloves (Minced)
  • ½ Cup Coconut Milk
  • 2 Tbsp Coconut Oil
  • Sea Salt
  • Black Pepper (Freshly Ground)

Instructions:

Get a soup pan and heat the coconut oil on medium heat. Add the garlic and the leek and
cook them for about 4 minutes. Then add the potatoes and the asparagus and let all
ingredients cook for another 3-4 minutes.

Put in the vegetable stock, cover the saucepan and let it simmer for about 15-20 minutes,
until the veggies are soft. Use an immersion blender or any type of blender you might have to puree the soup and then add the coconut milk. Add some seasoning and it’s ready to serve! Let us know if you tried this recipe out and if you liked it. Enjoy!
